Pietro Polini has always believed that dining is more than food—it is tradition, ritual, and experience. After arriving in the U.S. in 1999, he built his career in hospitality through New York kitchens, managing Siena Ristorante in Stamford, and opening Malvasia in Rimini, Italy.

In 2007, Pietro brought that vision to Ridgefield, Connecticut, where he founded TerraSole Ristorante. Housed in a historic farmhouse, TerraSole became a beloved destination for over 16 years, celebrated for its house-made pastas, seasonal menus, curated wines, and signature dishes like his Cavatelli con Salsiccia alla Pietro. Guided by his philosophy that every detail matters, Pietro built TerraSole into a cornerstone of authentic Italian hospitality.

Today, Pietro begins a new chapter with SILK, Miami Beach—his most ambitious creation yet. More than a restaurant, SILK is a world of elegance and mystery, where dining becomes theater, luxury is felt rather than shown, and every night tells a story.
